2 cups assorted ripe tomatoes, diced
1½ cups diced mango
½ cup diced white or red onion
½ cup fresh cilantro, chopped
3 tablespoons lime juice, preferably fresh
1 serrano chile, seeded and thinly sliced
1 clove garlic, minced (optional)
2 tablespoons extra-virgin olive oil
Freshly ground black pepper
Kosher salt (optional)
